Light and Airy Ramen Noodles

Ramen Noodles

This is almost too simple that I am a little embarrassed to even post this, but I had to share this simply yummy secret with you. I was recently having dinner at a new sushi bar and we decided to bring home an order of the house lo mein for our son. Lo mein is one of our favorite dishes but this one was a little different. I realized it was made with raman noodles resulting in a very light and delicious noodle dish.
We started with just a taste but before we knew it, my son's dish was devoured within minutes! The owner of the restaurant told us that using the ramen noodles was actually more expensive than the traditional noodles you find in most restaurants. We made him very happy that we appreciated his noodles! Although this recipe is very simple and doesn't have any Asian flavors, I made this in a pinch and it was a delicious nice change.


Ramen Noodle Dish

Ingredients

  • 2 packages of ramen noodles, discard the seasoning packets
  • 3-4 Tbls butter
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 1/4 cup of chopped parsley

 Boil noodles according to package. Drain and toss with remaining ingredients.
