Roasted Red Pepper Dip with Goat Cheese

This roasted red pepper dip is absolutely delicious. The recipe is from my friend Millie who is a fabulous cook. She got this recipe from her friend who is a caterer and says it's a big hit at every party.
I completely agree! If you are looking for something a little different and out of the ordinary, look no further. Try this at your holiday party and I guarantee people will be asking you for the recipe. Enjoy!


Ingredients
  • 3/4 cloves of fresh garlic
  • 2 Tbsp olive oil
  • 1 jar of roasted red peppers, drained
  • 1 small log of goat cheese, crumbled
  • 1/2 cup of dry bread crumbs
  • 1/4 cup walnuts, finely chopped 
  • Juice of half a fresh lemon
  • Pinch of red pepper flakes
  • 1 Tbsp balsamic vinegar

1. In a food processor, grind the garlic with olive oil. Add peppers and run the processor until all are pureed. 
2. Transfer to a mixing bowl and mix in all other ingredients and fold in the goat cheese. 
3. Mix all and let sit for a couple of hours. Serve with veggies, pita or tortilla chips.
