Roasted Red Pepper Dip with Goat Cheese |
This roasted red pepper dip is absolutely delicious. The recipe is from my friend Millie who is a fabulous cook. She got this recipe from her friend who is a caterer and says it's a big hit at every party.

Ingredients
- 3/4 cloves of fresh garlic
- 2 Tbsp olive oil
- 1 jar of roasted red peppers, drained
- 1 small log of goat cheese, crumbled
- 1/2 cup of dry bread crumbs
- 1/4 cup walnuts, finely chopped
- Juice of half a fresh lemon
- Pinch of red pepper flakes
- 1 Tbsp balsamic vinegar
1. In a food processor, grind the garlic with olive oil. Add peppers and run the processor until all are pureed.
2. Transfer to a mixing bowl and mix in all other ingredients and fold in the goat cheese.
3. Mix all and let sit for a couple of hours. Serve with veggies, pita or tortilla chips.
